Fall Wedding Cake Flavors (and What Couples Are Actually Asking For in 2026)

Fall is the busiest wedding season in the South, and it’s not close. Cooler evenings, better photographs, and a guest list that doesn’t wilt on the way to the reception.

It also changes what tastes right. A cake that’s perfect in June can feel thin in October. Here’s how we think about it.

The Edgar’s flavors that taste like autumn

Caramel Cake. If you order one thing off this list, order this. Caramel is the most autumn flavor we make — deep, buttery, unmistakably Southern, and it photographs beautifully against cream and ivory.

Italian Crème. Coconut and pecan in a cream cheese icing. This is the flavor grandmothers approve of, and it belongs at a fall reception.

German Chocolate. Coconut-pecan filling, chocolate cake. Rich enough for a cool evening without being heavy.

Red Velvet with cream cheese icing. Never out of season, but the color does something particular in October and November light.

White Cake with almond buttercream. The most-requested wedding flavor we make, fall or otherwise. If you want one tier everybody at every table will eat, this is it.

Coconut. Lighter than the rest, and a good counterweight if you’re doing multiple tiers in different flavors.

Two we’d steer you away from for a late-season outdoor reception: strawberry and lemon both use cream cheese icing and need to stay cold. They’re extraordinary cakes — strawberry is the one we’re known for — but a two-hour cocktail hour on a warm afternoon isn’t kind to them.

Do different tiers in different flavors

You don’t have to pick one. A three-tier cake can be white with almond buttercream on top, caramel in the middle, and chocolate on the bottom, and every guest gets the slice they’d have chosen. This is the easiest upgrade available to you and it costs nothing extra in complexity.

What’s trending in 2026 — and which trends are worth your money

The wedding press has settled on a fairly consistent read of 2026: heavy texture, sculptural piping, metallic and pearlescent finishes, fresh fruit as decoration, oval single-tier cakes, and a strong revival of vintage Lambeth piping. There’s also a real move toward large-format cakes — one dramatic tier instead of five polite ones — and toward styling the cake as a whole vignette with ribbon, candles, and fruit rather than setting it alone on a bare table.

Here’s the part worth acting on: the sheet cake is back, and it will save you real money.

The trend the industry calls “sheet cakes in all forms” is a practical one. You order a small, beautiful, photograph-worthy tiered cake for the cutting moment — and then you serve the room from sheet cakes in the kitchen. Guests get the same cake, baked the same day. You pay for decorating labor on two tiers instead of five.

One more piece of trend advice: if you’re serving other desserts too, size the cake for 75–80% of your guest count, not 100%. Not everyone takes a slice when there’s a dessert table.

About the groom’s cake

The groom’s cake is a Southern institution and fall is its season, because fall is football season. We do team-color cakes and cookie cakes constantly this time of year — tell us the two colors and let our decorators work.
